Description

Easy vegan no-bake pumpkin spice bites made with dates, cashews, and pumpkin puree. A healthy and quick fall snack.


Ingredients

  • 1 cup pitted Medjool dates, packed
  • 1/2 cup raw cashews
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup almond butter
  • 2 tbsp maple syrup (optional)
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup shredded unsweetened coconut, for rolling (optional)
  • 2 tbsp chopped pecans or walnuts, for rolling (optional)

Instructions

  1. Combine pitted dates and raw cashews in a food processor. Process until a sticky, crumbly texture forms.
  2. Add pumpkin puree, almond butter, maple syrup (if using), pumpkin pie spice, vanilla extract, and salt. Process until a thick, cohesive dough forms.
  3. Scoop about 1 tablespoon of mixture and roll into balls.
  4. If desired, roll balls in shredded coconut or chopped nuts.
  5. Place bites on a parchment-lined plate and refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.

Notes

  • For best results, use pure pumpkin puree and not pumpkin pie filling.
  • You can substitute almond butter with other nut butters like cashew or sunflower seed butter.
  • These bites can be stored in the refrigerator for up to one week or frozen for longer preservation.
