Description

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 4 cups low-sodium chicken broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 (15-ounce) can Great Northern beans, rinsed and drained
  • 1 cup shredded cooked chicken (rotisserie chicken works well)
  • Salt and freshly ground black pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onion and cook until softened, about 5-7 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Add the chicken pieces, cumin, chili powder, oregano, and cayenne pepper (if using). Cook, stirring, until the chicken is lightly browned on all sides.
  5. Pour in the chicken broth and bring to a simmer.
  6. Stir in the cannellini beans and Great Northern beans.
  7. Bring the chili back to a simmer, then reduce heat to low, cover, and cook for at least 20-30 minutes, or until the flavors have melded and the chicken is cooked through.
  8. If using shredded cooked chicken, stir it in during the last 5 minutes of cooking to heat through.
  9. Season with salt and pepper to taste.
  10. Serve hot with your favorite toppings.

Notes

  • For a creamier chili, you can mash some of the beans against the side of the pot before serving, or blend a portion of the chili and stir it back in.
  • Adjust the cayenne pepper for your desired level of spice.
