- 2 pounds boneless, skinless chicken breasts
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can Great Northern beans, rinsed and drained
- 1 (4 ounce) can diced green chilies
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced avocado
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Add cannellini beans, Great Northern beans, and diced green chilies.
- Pour in chicken broth.
- Sprinkle cumin, oregano, garlic powder, and onion powder over the ingredients.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
- Remove chicken from the slow cooker and shred it with two forks.
- Return shredded chicken to the chili.
- Stir well and serve hot with your favorite toppings.
Notes
- For a creamier chili, you can add 4 ounces of cream cheese in the last 30 minutes of cooking.
- Adjust green chilies to your spice preference.
