  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can Great Northern beans, rinsed and drained
  • 1 (4 ounce) can diced green chilies
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced avocado

Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. Add cannellini beans, Great Northern beans, and diced green chilies.
  3. Pour in chicken broth.
  4. Sprinkle cumin, oregano, garlic powder, and onion powder over the ingredients.
  5. Season with salt and pepper.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
  7. Remove chicken from the slow cooker and shred it with two forks.
  8. Return shredded chicken to the chili.
