- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (4 ounce) can diced green chiles, undrained
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 1 (4 ounce) can diced green chiles, undrained
- 4 cups chicken broth
- 1 cup half-and-half or heavy cream
- 1/2 cup chopped fresh cilantro
- Optional toppings: shredded cheese, sour cream, avocado
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from pot and set aside.
- Add chopped onion to the pot and cook until softened, about 5 minutes.
- Add minced garlic, diced green chiles, cumin, oregano, salt, pepper, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Stir in the rinsed and drained cannellini beans and the second can of diced green chiles.
- Pour in the chicken broth and bring to a simmer.
- Return the browned chicken to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes, or until chicken is cooked through and tender.
- Stir in the half-and-half or heavy cream and heat through, but do not boil.
- Stir in fresh cilantro just before serving.
- Serve hot with your favorite toppings.
Notes
- For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
- If you prefer a thicker chili, you can mash some of the beans against the side of the pot.
- This chili can be made ahead and reheated gently on the stovetop.
- Feel free to add other vegetables like corn or bell peppers.
