- 1 pound chicken breast, cooked and shredded
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (15-ounce) can great northern beans, rinsed and drained
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, cilantro
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in chicken broth, great northern beans, cannellini beans, and diced green chilies. Stir in cumin and oregano. Season with salt and pepper.
- Bring to a simmer and add shredded chicken. Cook for 15 minutes, stirring occasionally, to allow flavors to meld.
- Serve hot, topped with sour cream, shredded cheese, and cilantro, if desired.
Notes
- For a thicker chili, mash some of the beans before adding the chicken.
- Adjust the amount of green chilies to control the spice level.
- You can use rotisserie chicken to save time.
