Description

This soup is a mix of root vegetables and herbs, perfect for a cold winter day.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 cup diced potatoes
  • 1 cup diced sweet potatoes
  • 1 cup chopped kale
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Pour in vegetable broth and add potatoes, sweet potatoes, kale, thyme, and rosemary.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
  6. Season with salt and pepper to taste.
