Description
This soup is a mix of root vegetables and herbs, perfect for a cold winter day.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups vegetable broth
- 1 cup diced potatoes
- 1 cup diced sweet potatoes
- 1 cup chopped kale
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Pour in vegetable broth and add potatoes, sweet potatoes, kale, thyme, and rosemary.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.
- Season with salt and pepper to taste.
Notes
- Add a squeeze of lemon juice for brightness.
- Top with a dollop of plain yogurt or sour cream.
