Ingredients
3 cups all-purpose flour
1 1/2 cups salted butter, cold, cubed
1 1/2 cups granulated sugar, divided
2 large eggs
4 cups fresh rhubarb, chopped
3 tablespoons cornstarch
8 ounces cream cheese, softened
2 cups powdered sugar
Instructions
Preheat oven to 350°F (175°C)
Line a 13×9-inch baking pan with parchment paper
In a bowl, mix 3 cups flour, 1 1/2 cups granulated sugar, and 1 1/2 cups cold butter until crumbs form
Press one-third into prepared pan for the base
Bake for 15 minutes, remove from oven
In another bowl, toss rhubarb with 3 tablespoons cornstarch and 1/2 cup granulated sugar
Spread rhubarb mixture over cooled crust base
Return to oven and bake for 30 minutes or until filling is set
