Description
A quick and flavorful dessert combining tart rhubarb with a sweet cake mix. Perfect for using fresh rhubarb and easy to assemble with minimal effort.
Ingredients
6 cups fresh rhubarb, chopped
2 cups granulated sugar
2 boxes (12 oz each) yellow cake mix
1/2 cup soft margarine (vegan or halal alternative), melted
Instructions
Preheat oven to 375°F (190°C)
Line a 9×13-inch baking dish with parchment paper
Toss rhubarb with sugar in the dish and spread evenly
Sprinkle cake mix in clumps directly over the rhubarb layer
Drizzle melted margarine over the cake mix
Bake for 45-55 minutes until cake is golden and firm to the touch
Cool slightly before serving
Notes
Frozen rhubarb can be used (thaw and drain liquid first)
Add a can of halal-certified coconut milk for extra flavor
Cover and store leftovers at room temperature for up to 3 days
