Ingredients
1.5 lbs salmon fillets, skin removed, cut into 1-inch cubes
1 medium ripe pineapple, cut into 1-inch chunks
1 large red bell pepper, cut into 1-inch pieces
1 medium red onion, cut into 1-inch pieces
2 tablespoons olive oil
2 tablespoons lime juice
1 tablespoon low sodium soy sauce
2 tablespoons fresh cilantro, chopped
Instructions
Cut salmon into 1-inch cubes and set aside
Cut pineapple, bell pepper, and onion into uniform 1-inch pieces
In a bowl, mix olive oil, lime juice, soy sauce, and cilantro to create marinade
Toss salmon cubes in marinade for 10 minutes
Thread salmon, pineapple, bell pepper, and onion onto skewers
Preheat grill to medium-high heat
Grill skewers for 3-4 minutes per side until salmon is flaky and vegetables are charred
