Ingredients

4 grilled chicken breasts (about 6 oz each)
1 lb medium pasta shells
1 cup mayonnaise (full-fat or vegan)
2 tbsp Dijon mustard
1/2 cup chopped red onion
1 cup halved cherry tomatoes
1/2 cup sliced black olives
1/2 cup chopped fresh parsley
1 tbsp lemon juice
Salt and pepper to taste
8 oz shredded mozzarella or vegan cheese (optional)


Instructions

1. Cook pasta shells according to package instructions, drain, and let cool
2. In a large bowl, whisk mayonnaise, Dijon mustard, lemon juice, chopped parsley, salt, and pepper
3. Add cooled pasta, red onion, cherry tomatoes, and black olives to the dressing
4. Toss until well combined
5. Gently fold in cooled grilled chicken
6. Chill for at least 30 minutes before serving (optional)
7. Garnish with shredded mozzarella or vegan cheese if using

Notes

Use rotisserie chicken for time-saving convenience
Substitute with penne or rotini pasta
